- 1 head kale (I used two different kinds of kale and mixed them together)
- Homemade croutons (we make ours with garlic, ginger, and local bread from the bakery up the hill)
- Artichoke hearts quartered
- Summer dressing
- 2 tbsp olive oil
- 2 tbsp lemon vinegar
- 1 tsp truffle mustard
- Black pepper to taste
