Ingredients:
- 1 tbsp olive oil
- 1/2 onion
- 1 tomato
- 1 small green squash
- 1 can white beans
- 1/2 bunch basil
- Parmesian to taste
- 2 slides prosciutto
- Saute onion in the oil
- Add 1/2 tomato
- Add squash
- Let veg simmer until soft
- Add white beans in the liquid from the can
- Simmer for 7-minutes
- Bowl with basil, the other half of the tomato, parmesian and prsciutto
- Eat and enjoy!
