I love caprese salad. You have your sweet tomatoes, mixed with the kick of basil, topped with creamy mozzarella - delicious! Tonight we made a great caprese with tomatoes from our corner market (who happens to sell produce to all the local restaurants) and the BEST mozzarella from Trader Jos.
"Grown up" dinner aside, we used leftover tomatoes and basil to make the boys' food mixing them with white beans and parmesean. Yum! Cole hummed the entire dinner. Wilson ate it just so he could quickly move on to fruit (his fav).
